It was developed in the 1860s by John Bibb, a lawyer and amateur horticulturist from Kentucky, who cultivated it in the limestone soil of his garden. The lettuce gained popularity in the early 20th century when a greenhouse owner in Louisville started growing it commercially. Bibb lettuce has a distinctive appearance, featuring small, compact heads with large, ruffled outer leaves surrounding a soft, folded, blanched heart. The leaves are typically pale to medium green and are well-suited for wraps and bowls due to their cupped shape. This lettuce variety is dense for its size and can be grown in cooler regions, although it also performs well in heat.
