When this eggplant matures, its coloring will deepen to a rich purple. This variety is known for its high iron content and antioxidants. These slender purple eggplants are low in calories and high in vitamins A, B, and C. It is very easy to slice the prolific, meaty fruits these plants produce. The dark purple fruits are best used before they are 8 to 10" long. Each plant grows to 24 to 30" and produces 8 or more eggplants.
